 CHEESY GARLIC PARMESAN SPINACH SPAGHETTI SQUASH

1 medium spaghetti squash (approx. 2-3lbs)
2.5 TBSP minced garlic
1 tsp avocado oil or olive oil
5 oz new spinach cleaved
1/2 cup weighty cream
1 TBSP cream cheddar
1/2 cup newly ground parmesan cheddar in addition to extra for garnish
salt and pepper to taste
ground or cut mozzarella for fixing to taste
